Beer brewing

Yeast converts the sugars in the wort into alcohol and carbon dioxide. This carbon dioxide is also an important flavor contributor in the final beer. Often, after fermentation, we add a certain amount of carbon dioxide to the beer to achieve the exact desired level. One beer may have more carbonation than another, and this also contributes to the beer's taste.

06. Carbonation

Hops provide bitterness and aroma to beer. In addition to the noble hop varieties, there are now a vast number of varieties, each with their own aroma, flavor, and bitterness. So, it's wonderful for creating beautiful beers!

03. Hops

Malt is produced in the malt house. When barley or other grains are moistened, they begin to sprout. The enzymes in the germ convert the starch into sugar. Before this process is complete, it is halted by heating it. For light beers, the malt is only heated enough to dry it. For dark beers, malt that has been heated to a high temperature during drying is used. The sugars already present darken under the influence of amino acids and temperature. Coffee, chocolate, dried fruit are all flavors that can be achieved in the malt and the final beer with this process.

02. Malt

Occasionally, but really only occasionally, we also add spices to our beer. Actually, it's only in the case of De Heemraad, our wheat beer. Because that's where it belongs. Coriander and dried orange peel. If you don't put those in, it becomes more like a weizen. That's German. But still tasty.

Ingredients of beer

Every beer consists largely of water. Our beers are no exception to this. We use fresh tap water from Almkerk.

01. Water

Yeast converts the sugar from the malt into alcohol and carbon dioxide. So, it's pretty important stuff. In addition, yeast contributes various flavors and aromas. Depending on the temperature during fermentation, it imparts (amongst others) spiciness or fruity aromas.

No good beer without thorough knowledge and good tools

We brew our beers in our 15 hectoliter (hl) brewhouse in Almkerk. With a fermentation capacity of 135 hl and a lagering capacity of 60 hl, we can brew beer on average twice a week. Each batch of beer is subjected to a number of tests before it is packaged. After all, life is too short to drink bad beer. Hans Anton and Léon, who are both internationally certified beer sommeliers, know this too. So if something is not right, they smell and taste it immediately. We make beers that we like ourselves!

Making beer is perhaps most similar to cooking. Knowledge of ingredients and the process are both important. When you then combine everything according to a recipe and follow the right steps, you have beer. Or food. Whether it is tasty, you find out only afterwards. And that is what we focus on right from the start. The choice of malts, hops, and yeast largely determines what the resulting beer will be. Searching for combinations and lots of tasting and adjusting ensure that we make and continue to develop the tastiest beers.

Open on Thursdays from 16:00 and on Friday and Saturday from 12:00. We close at 23:00 on all our opening days.

It comes with an explanation to help you experience what we have to offer. For guided tastings for large groups, contact us. Tour? You're literally at our brewery! So take pictures and feast your eyes. Once or twice a year, we organize an open brewery day where you can admire the complete installation under the guidance of the brewer. With attention to the raw materials (animal and land), we choose our products. Everything is prepared with care. As much as possible is done in-house by our chef, whether it's on the smoker or in the kitchen. Everything receives the attention it needs, and of course, it arrives on your plate absolutely fresh. If you have any special dietary requirements, please let us know in advance so that we can take them into account.

Opening and delivery times during the holidays

During the award ceremony of the tenth edition of the Dutch Beer Challenge, we won a prize, a big one! Our Scheepstimmerman was awarded the gold medal in the 'Tripel' category, making it the best tripel in the Netherlands. We are quite proud of this, and it is a crowning achievement of the hard work of our entire team. But above all, it is an encouragement to continue our daily commitment to producing high-quality beer. We will go to great lengths for that.

The Dutch Beer Challenge is a competition for commercially available beers. The beers are submitted in categories. The beers are blind tasted and judged by a jury of beer sommeliers and other independent experts on aroma, color, flavor, and technical quality.

Dikke Prins is onze west-coast style IPA. Lekker bitter, maar zeker niet te. Een bier waarmee veel liefhebbers de eerste stap naar IPA's maakten. Maar het ook nog steeds drinken, omdat hij zo lekker fris en doordrinkbaar is! De 5,4% alcohol helpt daar zeker bij. De getoonde prijs is exclusief €0,10 statiegeld. Dit wordt bij het afrekenen toegevoegd.

Dikke Prins

Blond. Dat is de dochter van de burgemeester. Door de Belgische gist heeft ze een dito karakter. Een karakter met fruit en kruidigheid dat doet denken aan lychee en piment. Ze heeft een licht zoetje van de mout en niet teveel alcohol. De getoonde prijs is exclusief €0,10 statiegeld. Dit wordt bij het afrekenen toegevoegd.

Dochter van de Burgemeester

Ga maar even zitten. Dat is met de scheepstimmerman wel aan te raden namelijk! Maar liefst 8,8% alcohol maakt dit een mooie stevige tripel. De getoonde prijs is exclusief €0,10 statiegeld. Dit wordt bij het afrekenen toegevoegd.

Scheepstimmerman

De Rijksontvanger was net zoiets als nu de belastinginspecteur. Onze dienstmeid werkte in zijn huishouden. Toen ze een dochtertje kreeg, wist geen van de drie mannen in huis wie de vader was. Zij zelf ook niet. Het dochtertje was trouwens dol op fruit, net als jij. Dit fruitige blonde bier is lichtzoet, bevat geel fruit en heeft een zachte smaak en geur van hop. De getoonde prijs is exclusief €0,10 statiegeld. Dit wordt bij het afrekenen toegevoegd.

Dienstmeid van de Rijksontvanger

Een donker en doordrinkbaar bier. Dat is De Diefhenker ten voeten uit. Heerlijke aroma's van de mouten en gedroogd fruit worden gevolgd door een fijne, lichtzoete smaak. Volmondig, maar niet te zwaar.

De questeerder, bij hem kon je in de middeleeuwen al je zonden afkopen. Lekker makkelijk, bijvoorbeeld nadat je een duivels bier had gedronken. Met het drinken van dít sterk blond bier hoef je je helemaal geen zorgen te maken. Tenminste, als je er niet al teveel van neemt. Dit bier is het eerste recept van de hand van onze brouwer en biersommelier Léon. De getoonde prijs is exclusief €0,10 statiegeld. Dit wordt bij het afrekenen toegevoegd.

Questeerder

Het Zusje van de Dienstmeid is onze alcoholarme versie van de Dienstmeid van de Rijksontvanger. Het is dus een fruitbier met geel fruit (ananas, mango, etc) en slechts 0,3% alcohol. Heerlijk fris, doordrinkbaar en je kunt gewoon met de auto naar huis!

Zusje van de Dienstmeid

De Poldermolenaar is een Belgische stijl quadrupel, zoals de trappisten hem ook brouwen. Dit bier krijgt zijn donkere kleur van de donkere kandijsuiker die bij het brouwen is gebruikt. De Belgische gist zorgt voor een toets van gedroogd fruit en vijgen die perfect combineert met de hinten van laurier en paradijszaad. Met een flinke dosis koolzuur en 10% alcohol een perfect winterbier om rustig bij het haardvuur van te genieten. De getoonde prijs is exclusief €0,10 statiegeld. Dit wordt bij het afrekenen toegevoegd.
